I have made many a meringue, but never really mastered the pavlova. The big thing really seems to be not to open the oven once the pavlova's go in! Making sure the egg whites are stiff enough is also a key point to making a beautifully fluffy dessert!

A stand mixer really does make this recipe very simple, though it's not impossible without! My kitchen-aid lives on my bakers rack since I also have little counter space!

I've been meaning to take a stab at pavlova myself, but I need to sort out my whisk situation first. I had a hand mixer but two of the whisk wires snapped off, leaving it a fairly sad little tool. I keep thinking about investing in a stand mixer - if only I can create some counter top real estate first!

I don't tend to think of blueberries with meringue very often, but it did cross my mind as I was developing a pie recipe a few weeks ago. I couldn't do it (no way to set/bake the meringue), but the idea stuck in my head... and now here we are! No doubt the flavour combination is stellar. Glad to see a bit of lemon juice in with the blueberries too. It's almost a must-have pairing in my opinion!
