Breakfast perfection! I have also heard of these called Eggs Vancouver but who knows. I had no idea about the other names either. Two things that I always insist for Eggs Benny...a lovely Hollandaise and English muffins. Other than that, the sky's the limit for toppings, even smoked salmon!

Now THIS is my kind of eggs Benedict! Smoked salmon is always a go-to treat for me but in this breakfast it's just irresistible.
