This sounds really wonderful. The photo in the post looks like you roasted the thyme as well. Is that correct, or just add it to the soup? Also, could you roast the garlic as a whole head?
If I have already roasted garlic in my fridge, how would I have stored it, and how long will it keep?

I love that you roasted your ingredients for this recipe!! I bet the flavours got really concentrated and you got a touch of caramelization in there as well. I definitely will have to give this a try with my next batch of tomatoes! 🙂

This looks REALLY good. Like, really really realllllly good. I love that you've roasted the tomatoes along with all of the other components too! The depth of flavour must be spectacular. I'm totally going to have to take a stab at this too - of all the tomato-based things I've done, I have yet to actually make a tomato soup. And by the way, I LOVE the way you've plated this. Soups can be so hard to shoot in an interesting way, but you've really done a great job.

Love it. I have been playing chicken with my garden and thankfully the frost hasn't arrived yet and my tomatoes are still growing. It has been a crazy year, for sure. This soup looks like a great way to use up the glut of tomatoes.
