Hey Karen, You will get similar results. The time spent cooking would have to be adjusted, probably down to 2 or 3 hours. I have done Instant Pot chicken stock with decent success. I find it turns out more of a broth though, with not as high of a gelatin content.

You certainly can! I actually used to do this while working in Switzerland. We would can all our stocks in mason jars and store them in the cellar. this way we could make large batches of stock at once, and store it while having minimal fridge space.
