Dear Chef, I really enjoyed this recipe. It was exactly what I was looking for. I adapted it a bit for what I had in the kitchen along with my 2 quarts of turkey broth, no carrot or wine, as I don't consume wine. I used two kinds of mushrooms in my soup, some green tea kombucha vinegar and a little bit of balsamic vinegar, some asparagus, and may sautee up some butternut squash (maybe a cup or less) to add the sweetness that's missing with your carrot. I loved your recipe, it is everything I was hoping for to use the leftover turkey and stock from the carcass. Thanks for this brilliant recipe.
